The Saints and Scholars menu is truly a labor of love by Owner Amanda Stoffel. She worked for well over a year with the Gilkey Consulting Group before coming up with the menu we used for opening day in October of 2022. The process to curate a menu consisting of a mixture of somewhat traditional dishes with a more modern or American twist along with other pub favorites was not an easy one. There was A LOT of time and effort which included tasting sessions, recipe edits, reviews and changes over the year before coming up with what she felt fit the vision. Head Chef Brad White came in and added his input and additional items as well. This is an everchanging element of our new Irish Pub. Keep an eye out of new items based on customer feedback along with changes along the way to insure the best possible food experience for all guests. We are excited about what’s to come! 😊

The Blender’s Cut Cask Strength

This beast of a dram is the highest-proof Irish Whiskey on the market at the time of its release.

Two Stacks was launched in 2020 by a group of 3 friends ― Shane McCarthy, Donal McLynn, and Liam Brogan ― who had spent 6 years working together in the craft beverage importing and distribution business. With the Irish Whiskey Renaissance well underway, they deemed the time was ripe for a proper Whiskey brand ― a contemporary brand, built upon Irish Whiskey’s rich heritage. They borrowed the name from the two chimney stacks of the Dundalk distillery that were so tall that seamen used them as a navigation point.

Their Killowen Distillery might be the smallest in Ireland, but size only matters to a point. This does mean that they work with other independent distilleries when blending their juice. The Blender’s Cut is a cask-strength version of their Two Stacks Whiskey that comes from Dundalk’s Great Northern Distillery. It’s a blend of malt, grain, and pot-still Whiskey, 5 juices in total, aged in virgin oak, ex-Bourbon, as well as Sherry casks. Bottled at 130 proof, it’s one beastly and rich blend with a complex balance of spice, fruit, and a touch of peat.
