It's National Maple Syrup Day!
Today’s Yuletide Calendar reveal is a heartfelt celebration of family, heritage, and the season—all wrapped up in a delicious Spiced Maple Old Fashioned.
Did you know that Adrian, my husband and Saints & Scholars’ co-owner, is Canadian? His family first moved from Ireland to Canada before settling here in the States. So, in honor of National Maple Syrup Day, it only felt fitting to showcase a little Canadian love with this maple-inspired cocktail.
This drink also holds special meaning: it’s a tribute to Adrian’s late father, Maurice, who was born in Belfast and loved McConnell’s Irish Whiskey. Maurice was not only one of Adrian’s greatest supporters but also a steadfast source of encouragement during the trials and tribulations of our pub renovation.
Today’s drink is a tribute to where we come from, the people who lift us up, and the sweetness of the season.

A Toast to Heritage: About McConnell’s Irish Whiskey
Founded in 1776, as old as the United States itself, McConnell’s Irish Whiskey is one of Ireland’s oldest whiskey brands. Created by brothers John and James McConnell in Belfast, McConnell’s thrived for over a century, becoming a hallmark of Irish quality and craftsmanship.
However, the brand’s history is as storied as the whiskey itself:
In 1909, a devastating fire destroyed much of the distillery, including 500,000 gallons of whiskey.
Prohibition in the 1920s dealt another blow, leading to McConnell’s closure.
After nearly a century lost to history, McConnell’s was revived in 2020, once again offering a whiskey steeped in tradition and crafted with care. We are proud to feature two of their 5-year whiskeys:
McConnell’s Original Irish Whiskey

Nose: Vanilla, honey, and toasted oak.
Palate: Smooth and light with notes of malt sweetness, vanilla, and honey.
Finish: Clean and lingering, with hints of vanilla and oak.
McConnell’s Sherry Cask Finish

Nose: Rich aromas of dried figs, dark chocolate, and Christmas spices like nutmeg and cinnamon.
Palate: Demerara sugar, ripe cherries, black raspberry, and dark chocolate shavings.
Finish: Lingering oak with subtle clove spice and hints of leather.
