Winter Solstice in Ireland
The Winter Solstice held deep significance for ancient Irish communities, symbolizing hope, renewal, and the cyclical nature of life. One of the most remarkable examples of this is Newgrange, a 5,000-year-old monument in County Meath. Built even before the pyramids of Egypt, Newgrange is perfectly aligned with the rising sun on the solstice.
At sunrise, light streams through a small roof-box above the entrance, illuminating the inner chamber for a brief but magical moment. This stunning display reflects the belief in the triumph of light over darkness—a concept that resonates through Irish culture to this day.
In addition to these celestial marvels, the solstice was a time for communities to gather, share food, and look forward to the coming year. Though the details of these ancient rituals are largely speculative, they likely involved communal feasts and storytelling, fostering a spirit of togetherness that we continue to cherish.

Bananas Foster French Toast: Vanilla custard-filled brioche, deep-fried to golden perfection, served with powdered sugar, brûléed bananas, and rich Bananas Foster syrup. A decadent treat!
The Dubliner: Inspired by a dish we enjoyed in Dublin! Smoky chorizo, sweet potato, avocado, poached eggs, peanut rayu, sautéed mushrooms, and your choice of toast. An elevated and flavorful egg toast experience!
